This dish starts with lightly dredged shrimp, sautéed until golden, then brought together with garlic, lemon, and a splash of Chardonnay. Ingredients:

  • 1 pound large shrimp, peeled, de-veined, and butterflied
  • 1/2 cup flour
  • 1/2 cup olive oil
  • 3/4 cup Michael Pozzan Chardonnay
  • 1 teaspoon Worcestershire sauce
  • 3 cloves garlic, peeled and minced
  • Juice of 1/2 lemon
  • 1/4 cup chicken stock
  • 2 drops Tabasco sauce (optional)
  • 1 inch cube chilled butter
  • Salt and pepper to taste

Instructions:

Dredge shrimp in flour and sauté over high heat. Working in batches, cook until golden, about 2 minutes. Transfer to a paper towel-lined plate.

Drain and discard excess oil from the pan, then add Chardonnay, Worcestershire sauce, garlic, lemon juice, chicken stock, and Tabasco (if using).

Cook over high heat until the sauce reduces by half, about 5 minutes. Whisk in the chilled butter until the sauce becomes smooth and slightly rich. Season with salt and pepper to taste.

Lower the heat to medium and return the shrimp to the pan. Toss gently for about 1 minute, just until heated through.

Serve with rice pilaf or steamed vegetables, pour a glass of Sonoma Coast Chardonnay, and enjoy at the table with family.
