Shrimp Scampi Diablo

Shrimp Scampi Diablo is one of those dishes that brings a little energy to the table. Bright, savory, and just a touch spicy, it’s the kind of recipe that feels both lively and comforting at the same time. In our family, it’s a go-to when we want something flavorful that still comes together with ease. Perfect for gathering, sharing, and enjoying with a good glass in hand.

This dish starts with lightly dredged shrimp, sautéed until golden, then brought together with garlic, lemon, and a splash of Chardonnay. A hint of heat and a touch of richness round it out, creating a sauce that’s layered, balanced, and full of character. It’s bold enough to stand on its own, yet versatile enough to pair beautifully with simple sides like rice or seasonal vegetables.

We love pairing this with our Sonoma Coast Chardonnay. Its freshness and structure complement the richness of the dish while lifting the citrus and spice, creating a pairing that feels complete and effortless.

It’s a dish that invites you to sit down, pour a glass, and enjoy the moment.

Ingredients:

  • 1 pound large shrimp, peeled, de-veined, and butterflied
  • 1/2 cup flour
  • 1/2 cup olive oil
  • 3/4 cup Michael Pozzan Chardonnay
  • 1 teaspoon Worcestershire sauce
  • 3 cloves garlic, peeled and minced
  • Juice of 1/2 lemon
  • 1/4 cup chicken stock
  • 2 drops Tabasco sauce (optional)
  • 1 inch cube chilled butter
  • Salt and pepper to taste

Instructions:

Dredge shrimp in flour and sauté over high heat. Working in batches, cook until golden, about 2 minutes. Transfer to a paper towel-lined plate.

Drain and discard excess oil from the pan, then add Chardonnay, Worcestershire sauce, garlic, lemon juice, chicken stock, and Tabasco (if using).

Cook over high heat until the sauce reduces by half, about 5 minutes. Whisk in the chilled butter until the sauce becomes smooth and slightly rich. Season with salt and pepper to taste.

Lower the heat to medium and return the shrimp to the pan. Toss gently for about 1 minute, just until heated through.

Serve with rice pilaf or steamed vegetables, pour a glass of Sonoma Coast Chardonnay, and enjoy at the table with family.
